Harvest preparation at Woodchurch 02, Oct 2015

It’s that time of year again. Our 4th harvest is almost upon us.

Although spring arrived late this year, we’ve had a very good summer and the vines have produced plenty of fruit which is ripening well. Over the last couple of weeks we’ve been testing the sugar and acid levels of the grapes to determine the best time to pick. To make the perfect sparkling wine we're aiming for above 68 Oechsle sugar and between 12-14g of acid, and the longer you can leave the grapes on the more phenolic (fruit) flavours will be present in the final wine. We’re expecting to start picking on the 10th October. Individual clone tests this weekend will help determine which varieties we pick first.
